An elote inspired recipe. Elote, also known as Mexican street corn, corn on the cob topped with mayo-sour cream sauce, cotija cheese, and fresh chopped cilantro. This Street Corn Avocado Toast recipe turns a street food favorite into a healthy snack perfect for any time of the day.

  • 4 oz cheese
  • chili powder
  • 2 oz cilantro

  • 2 oz mayonnaise
  • 4 slice bread
  • 1 avocado
