Parmesan & Panko-Crusted Cod

  • 3 tsp mustard
  • 2 cod
  • 2.5 tsp oil
  • salt
  • black pepper
  • 2 oz bread crumbs
  • 1 clove garlic
  • 2 tbsp cheese
  • 1.5 tsp Italian seasoning
  • 2 lemon wedge
  • Step 1

    Place an oven rack in the center of the oven, then preheat to 450°F.

    Step 2

    Using a zester, finely grate a clove of garlic into a paste (or use the small side of a box grater). In a bowl, combine breadcrumbs, garlic paste, lemon zest, some cheese, some Italian seasoning, the juice of 2 lemon wedges, and 2 teaspoons of olive oil. Season with salt and pepper. Stir to thoroughly combine.

    Pat the fish dry with paper towels. Transfer to a plate. Drizzle with olive oil and season with salt and pepper; turn to coat. Carefully place on a sheet pan. Evenly spread or brush the mustard onto the fish, then top with the breadcrumb topping (pressing to adhere).
