Orzo, Zucchini & Peppers

  • 0.5 bunch parsley
  • 2 tbsp cheese
  • 6 lemon wedge
  • 3 oz shishito pepper
  • 2 clove garlic
  • 1 zucchini
  • 1 tsp oil
  • 4 oz pasta

    Taste, then season with salt and pepper if desired. Garnish with chopped parsley.

    Add the ingredients to the pot; stir to combine.

    Transfer vegetables to the pot of cooked pasta and stir to combine.

    Add the pepper pieces and chopped garlic; season with salt and pepper.

    Add zucchini pieces to the pan in an even layer. Cook, without stirring.

    In a medium pan (nonstick, if you have one), heat olive oil on medium-high until hot.

    Turn off the heat, drain pasta thoroughly and return to the pot.

    Add the pasta to the pot of boiling water and cook.

    Fill a medium pot 3/4 of the way up with salted water; cover and heat to boiling on high.
