  • 1 bunch collard greens
  • salt

  • 1.5 tsp mustard seeds
  • 2 clove garlic

    Step 1

    Plate mashed potatoes and collard greens.

    Step 2

    Add 1/4 cup of water.

    Step 3

    Add the chopped collard greens; season with salt and pepper.

    Add the chopped garlic and mustard seeds. Cook, stirring frequently, 30 seconds to 1 minute, or until slightly softened.

    In a medium pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high.

    Using a fork or potato masher, mash to your desired consistency. Taste, then season with salt and pepper if desired.

    Turn off the heat. Drain thoroughly and return to the pot.

    Add the diced potatoes to the pot of boiling water.
