Marinated Cucumber & Sesame-Dressed Slaw

Not your typical cole slow. This recipe makes a tangy, refreshing, and healthy Asian-inspired slaw with cucumbers, carrots, cabbage, and scallions. Best served as a side to the Korean Style Burger.

  • 2 scallion
  • 1.5 tsp vinegar
  • 1.5 tsp oil
  • salt

  • 6 oz carrot
  • 8 oz cabbage
  • Step 1

    Thinly slice the scallions, separating the white bottoms and hollow green tops. Peel the carrots and grate on the large side of a box grater. Cut out and discard the core of the cabbage; thinly slice the leaves. Combine the grated carrots and sliced cabbage in a bowl. Add the sliced green tops of the scallions, some vinegar, and some sesame oil; season with salt and pepper. Set aside to marinate, stirring occasionally, at least 10 minutes. Taste, then season with salt and pepper if desired.
