Bok Choy & White Rice

Ingredients

  • 10 oz bok choy
  • salt
  • black pepper
  • 2 scallion
  • 2 clove garlic
  • 2 tsp oil
  • 4 oz rice
  • 8 oz water
  • Step 1

    Step 1

    Transfer to the pot of cooked rice; stir to combine. Taste, then season with salt and pepper if desired.

    Step 2

    Add the sliced bok choy; season with salt and pepper. Cook, stirring frequently, 2 to 3 minutes, or until softened.

    Add the sliced white bottoms of the scallions and chopped garlic. Cook, stirring constantly, 1 to 2 minutes, or until softened.

    In a medium pan (nonstick, if you have one), heat olive oil on medium-high

  • Step 5

    Turn off the heat and fluff with a fork.

    Step 6

    Heat to boiling on high. Once boiling, reduce the heat to low. Cover and cook, without stirring.

    Step 7

    In a small pot, combine the ingredients.
